Okay, so I admit, my sweet tooth has been running a bit rampant this week. I fully blame that time of the month... (TMI, guys?) As I fully admit to indulging in a not-so-great for you scone yesterday, and maybe also going spoon-first in my chocolate peanut butter stash more than once, I knew I needed to shift my attention towards something more fulfilling and nutritious. Something that could fill me up, satisfy my love for chocolate and peanut butter, but also leave me sans bloated belly-processed-sugar hangover.
Raw Brownies, you are my savior.
These brownies are not your traditional Pillsbury box-brownies, but I promise they don't take any longer to whip up than your childhood fave! In fact, it may actually be quicker without the baking time! To make these even more enticing, they are completely free of processed BS, excess sugar, and unwanted fat. These brownies are FULL of amazing nutrients and super foods that will leave your body feeling AH-mazing.
Here are some of the benefits of the very few ingredients in these babes.
Cacao Powder: High in flavonoids (antioxidants) which studies show may help protect against cardiovascular disease and cancer. Cacao powder is also one of the best sources of plant-based magnesium, which is a natural stress reliever and muscle relaxer. In addition, cacao powder also contains calcium, zinc, copper, iron, potassium, along with fiber and some protein. Superfood, hello.
Dates: Nature's natural sweetener. Medjool dates are your go-to when making any kind of raw dessert, as they are the stickiest which help bind everything together . Their delicious caramel flavor doesn't hurt either. If you want to save your blender, just be sure to take out the pits before popping them in there! Dates are an excellent source of fiber, potassium, magnesium, copper, and manganese.
Almonds: High in the same minerals mentioned above, along with being a good source of monounsaturated fats and Vitamin E. Let's get nutty.
Hemp Seeds: My favorite little buggers. Really good plant-based source of omega-3 fatty acids, and are high in protein. These seeds literally go with anything, from sweet to savory dishes. They can be blended into anything or sprinkled on top of your favorite dish to give a nutrient punch along with a slight, nutty flavor.
Now go whip these up and tell your sugar cravings to F Off.
Raw Brownies with Peanut Butter Hemp Seed Drizzle
3/4 C. Raw Pecans (or Walnuts)
3/4 C. Raw Almonds
15-20 Medjool Dates, pitted (the bigger the date, the less you may use)
3 Tbsp. Raw Cacao Powder
1/2 tsp. Coconut Oil, melted
1 tsp. Vanilla
Optional: 2 Tbsp Maple Syrup
For the topping: 1 Tbsp Organic Smooth Peanut Butter + 2 Tbsp Hemp Seeds
1. Place nuts in food processor, then blend until they form crumbles. Next, place the rest of the ingredients (except for the toppings) to the food processor, and blend until it forms a sticky mixture. You may need to check on it once or twice, and perhaps add a few tsps of water to make everything stick together. The maple syrup is completely optional, but does help bind things together.
2. Take a baking loaf pan and spoon the batter into it. Use a spoon or the palm of your hand to press the dough firmly into the pan. Even out the edges so you have a nice foundation. Next, warm the peanut butter either on the stove top or pop it in the microwave for 20 seconds. Give it a stir, then drizzle on top of the brownies. Now's the time to add your hemp seed friends. If you want to get even more fancy, you can sift some cacao powder on top as well to give it all that jazz.
3. Place your brownies in the freezer for about an hour to let them set. I know you'll be tempted to go hunting back for them, but let em' do their thing. I promise it'll be worth it once you try to cut into them.
