When a sweet craving hits, there's not much that beats a solid chocolate chip cookie. Slightly crusty on the outside, warm & fluffy on the inside, & with gooey dark chocolate morsels you can sink your teeth into; that's what these bad boys are all about.
What sets these cookies apart from most standard chocolate chippers is that they contain all plant-based ingredients and a lot less fat and sugar. Coconut oil replaces traditional butter, and chia 'gel' subs the call for eggs. Throw in whole some grains, and violà!
The best part? They are so simple to make and can be in your mouth in less than 20 minutes.
Salted Oat Chocolate Chip Cookies
1 Tbsp chia seeds
3 Tbsp water
1/4 C. coconut oil, melted
1 tsp vanilla
3/4 C. brown sugar
1 C. spelt flour
1 C. rolled oats
1/2 tsp baking soda
dash of sea salt + more for on top if you wish
1/4 C. dark chocolate chips (vegan)
Directions: Preheat oven to 350 F. In a small jar, combine chia seeds and water and stir / let sit until a gel begins to form (roughly 3-5 minutes).
In a large mixing bowl, combine sugar, coconut oil, and vanilla. Add in the chia gel, and stir well. Next, add in flour, oats, sea salt, and baking soda and stir until well combined and a solid dough forms. Pour in the chocolate chips and stir.
On a cookie sheet, spoon out dough and press down to form 9-12 cookies. Optional: sprinkle a dash of sea salt on top to give them that sweet+salty kick ;)
Bake in the oven for 10-12 minutes.
