Regardless of the occasion, these energy bites hit the spot! Though the flavor of these might make you think you're eating a Reese's cup infused granola bar, these bites are surely nutritious and devoid of all that unwanted processed gunk. They have the perfect balance of nutty flavor and chocolatey goodness, along with a dose of healthy fats, along with fiber-rich oats and flax to give you that satiation and mood stabilization your body desires.
Pop 1-2 bites at a time for a protein rich, fiber-filled party in your mouth :)
Peanut Butter Chocolate Chip Energy Bites
1 C. organic rolled or quick oats
1/2 C. flaxseed meal
1 Tbsp chia seeds
1/2 C. organic peanut butter (or other nut butter of choice)
1/2 C. chocolate chips (I like EnjoyLife brand-- vegan and allergen friendly)
1/3 C. maple syrup (or honey if not vegan)
1/2 tsp vanilla
Directions: Place all ingredients in a large mixing bowl, and combine until a dough forms. Roll into ping-pong ball sized bites. Refrigerate. That's it!
Recipe makes around 12-15 depending on size. Store in the fridge for up to a week for an easy grab and go snack.
