Summer is finally here upon us, and I'd say we more than well deserve it! With Snowzilla and the infamous record breaking days of rainfall behind us, it's about high time we whip out the sun hats, wedges (maybe boat shoes for you, lads) and sunnies and get ready for some summer galavanting!
Whether you're vacationing on the beach or just hanging low on your porch or backyard this summer, this salad will please for all occasions. Simple enough to put together on a busy night, yet has the 'oomph' to impress a crowd-- this is one for the books.
Wheat berries get a thumbs up from this RD! Packed with whole grains, these berries are an excellent source of protein, fiber, and micronutrients such as B vitamins, phosphorus, and magnesium. AKA, these berries can help keep you satiated, lower your blood cholesterol and sugar levels, while helping with energy metabolism and transport. They have a nutty, rich flavor and al-dente texture that will give your salads and sides a good chew!
Summer Wheat Berry Herb Salad
1.5 C. dried wheat berries
3 C. water
1.5-2 C. organic strawberries, chopped
1/4 red onion, chopped
2 scallions, chopped
5 or so sprigs of fresh parsley, chopped
2 tsp olive oil
1/2 fresh lemon, juiced
1/4 C. fresh goat cheese crumbles
sea salt & pepper to taste
Directions: Toss wheat berries and water into a sauce pan, and heat until water is boiling. Lower heat to medium and cover with lid. Cook berries for about 45 minutes, or until tender. Drain any remaining water, and allow berries to cool.
In a bowl, toss together wheat berries, strawberries, herbs, olive oil, lemon, and spices until well combined. Serve in a bowl, and sprinkle goat cheese on top. Makes about 3-4 servings. Store in the fridge for up to 2 days.
