This recipe was passed along to me from one of my dear clients, and was so incredibly tasty I had to share with you guys.
Many of you are interested or following the Paleo diet, which is exactly what this recipe is designed to accommodate. However, this recipe is for anyone and everyone, as it is completely plant-based, a no-brainer to make, and super delicious!
For those of you that don't know, the paleo diet is a form of eating that mirrors the way cavemen used to eat back in the day. AKA, consuming anything that they we used hunt or gather (meat, fish, nuts/seeds, leafy greens and other veggies) and avoiding anything else we did not have access to (grains, sugary foods/beverages, dairy, etc). Although I may not agree with all aspects of this form of eating, I can see some definite benefits with following this diet, as it generally helps followers rid the body of processed foods and unnecessary calories. Hence, their success in losing weight and feeling better in their own skin.
So whether you're a paleo or not, we all could use some healthy pancakes at times and/or reduce our intake of refined carbohydrates. Below, one can find a delicious and healthy alternative to our traditional American pancakes. These are made with the use of almond flour (naturally gluten and grain free) to provide a filling and allergen-friendly breakfast.
Blueberry Paleo Pancakes
1 C. almond meal/flour
1 C. tapioca flour
4 pasture-raised or organic eggs
1/2 C. unsweetened apple sauce
1/4 C. unsweetened almond milk
2 tsp baking powder
1 tsp vanilla
1 tsp cinnamon
1 pinch of sea salt
1 C. organic blueberries (or fruit/nuts/choc chips of choice)
In a large mixing bowl, combine almond meal, tapioca flour, sea salt, cinnamon, and baking powder. Stir well. Next, add in your eggs and liquids, whisking well to form the batter. Heat grass-fed butter or ghee/ vegan spread on a skillet, and pour batter onto skillet. Allow pancakes to cook for a few minutes or until bubbles start to form, then slip once. Serve with butter, maple syrup, and/or toppings of choice.
