For those of you on the Paleo bandwagon, eating a gluten free diet, or just simply interested in trying a granola made without the use of grains, this one's for you!
Made with just a handful of ingredients, this granola has quite possibly been the easiest and quickest recipe I've made so far. And may I note, also one of the most delicious! All ingredients are plant-based with an extremely high nutrient profile, which will keep your energy levels soaring and hunger at bay.
Medjool dates serve as the natural sweetener and binder here. Dates are indeed nature's caramel; they have a dessert-like sweetness to them that can satisfy most sugar cravings (tested, and so true!). They also serve as a good source of potassium and magnesium; minerals needed to support our nervous system, muscle recovery, and heart health. They are also high in soluble fiber, which helps with proper elimination. The various nuts and seeds utilized offer a range of vitamins, minerals, healthy fats and fiber- all things we need to stay on our health game!
Note: If you have a nut/seed allergy to any of the below, simply swap out and add more of your favorite nut/seed to compensate!
5 Medjool dates
1/2 C. raw cashews
1/2 C. raw walnuts
1/4 C. raw sunflower seeds
1/4 C. raw pumpkin seeds
1/2 C. unsweetened coconut flakes
1 tsp vanilla
pinch of pink sea salt
Directions: Set your oven to 350 degrees F. Place raw cashews on baking sheet, and bake for 7 minutes, or until nuts are slightly golden. Next, place all ingredients into a food processor and pulse until mixture is mostly uniform in consistency. Store in the fridge for up to a few weeks.
Use it as a topping for your favorite yogurt or oatmeal bowl, or just eat it on it's own as a delicious and grain-free granola alternative!
