For those of you who asked on social media, I wanted to share with you all my pumpkin oats recipe! It's definitely similar a take on a recipe I've posted last season, however this one is completely plant-based and has extra fixin's that make it taste wonderful! This is a great breakfast choice that will keep you full for hours with lasting energy, thanks to the fiber-containing oats and pumpkin!
1/2-3/4 C. organic rolled oats
1/2 C. almond milk
2 Tbsp organic pumpkin puree
1/2 tsp cinnamon
Optional toppings: cashew butter, homemade granola, chia or hemp seeds, fruits of choice, maple syrup or honey
Directions: Pour oats and almond milk into a pot over the stove. Set on medium heat, stirring occasionally until oats thicken to desired consistency (about 7-10 minutes). Stir in pumpkin puree and cinnamon until well mixed. Transfer into a single serving bowl, and top with homemade granola, sliced banana or berries, a dollop of cashew butter, and a drizzle of sweetener of choice.
