My apologies for being a bit quiet over here on the blog lately! I could ramble about reasons why I haven't had the chance to just sit down and finally write out some of these recipes I've had in my head for a while, but I'll spare you the nitty gritty and just excuse it all with: L I F E .
If you're a frequent reader you're probably familiar with my slight infatuation with Moon Juice; if not, I insist you go learn more about it here. In the past few months I've had the pleasure of taking a few trips to California to visit this wonderful shop, unexpectedly developing a serious crush on their ready prepared overnight oats. It was simple yet packed with flavor, and fortunately kept me feeling satiated for quite some time after consumption. I'd say a win-win! Once I got back to DC I was missing those gooey, coconutty oats pretty hard, so I decided I'd whip up my own version. Pleasantly satisfied with my creation, might I add!
If you're a newbie to overnight oats, you don't know what you've been missing! If you find yourself rushing in the AM and often say you don't have 'time' to have breakfast, this is one of those grab-n-go options that kicks the excuses out the door and leaves your body feeling nice and nourished instead. Overnight oats take all of a minute or two to prepare the night before; all you need to do is pop the ingredients in a mason jar, give it a nice stir, pack a spoon for the morning, and you're good to go.
Moon Juice Overnight Oats
3/4-1 C. unsweetened plant milk (almond, coconut, etc)
1/2 C. rolled oats
1 tsp chia seeds
1 Tbsp pumpkin seeds
1 Tbsp unsweetened shredded coconut
1/2 tsp cinnamon
1 tsp maple syrup
pinch of pink sea salt
Toppings (optional): fresh fruit, nuts, granola, coconut shreds, etc.
Directions: Combine all ingredients in a mason jar. Stir well, seal with lid and place in the refrigerator overnight. In the morning, give the mixture a good shake or stir again and enjoy with toppings of choice.
