Happy Monday folks! This one may be a doozy for many of you, pending how many buffalo chicken wings, chips + dip, beer, and other Super Bowl fare you may have filled your bellies with last night. It's safe to say that these cookies were probably the most indulgent thing that came out of the oven in our house last night, and I'm fully OK with that; my belly thanks me this morning, for sure!
Lately I've been on a little grain-free baking kick to try out new ways to make normal recipes infused with a little more nutrient dense ingredients in place of processed white flour that's typically found in recipes like chocolate chip cookies, pancakes, breads, etc. These cookies taste like your favorite Nestle recipe, however they utilize unrefined organic coconut oil in place of butter, and almond flour instead of white flour.
What does this mean, exactly? MCT's (medium-chain triglycerides) from coconut oil provide an easier to metabolize source of fat and a subtle coconut flavor, while the almond flour provides a good source of fiber, protein, monounsaturated fat, and vitamins & minerals like iron, calcium, magnesium, and Vitamin E. It's also advantageous for those whom are avoiding grains or gluten for whatever the reason (be it an allergy, following a Paleo diet, etc). Although I don't follow any special diet myself, I love trying new recipes that are accessible to others! And as most of you know, I do love me a good sweet treat. These cookies are chewy & gooey, with a slight crunch on the edges. Literally perfection; I'd give this one a solid 5 stars. 'Nuf said.
