If there's one thing I love in life, it's a baked good (donut, muffin, bread, cookie...you name it!) paired with some black coffee. The combination of a sweet treat + the bitterness of a good cup o' joe truly warms my heart! And although I'm all about indulgence at times and staying mindful to your cravings and hunger cues, it ain't always good to dig in every single time!
So how to have the best of both worlds? Get crafty with your baking skills, folks.
One of my fave bloggers Rachel Mansfield really got it right with this apple bread! In fact, she pretty much nails every recipe she posts, while also seeming to specialize in anything containing bananas and peanut butter (YAS). Needless to say, I want to make everything on her website and definitely plan on sharing more with you guys.
This apple bread is great for those who aren't huge banana fans, and/or anyone who may follow a Paleo diet/ avoid gluten and dairy. The bread itself is ultra-moist, and the crumble on top provides the perfect sweet crunch. With it having a relatively high fiber/protein/ fat content, it'll keep you full longer and won't send your blood sugar soaring like most other commercially processed breads.
